C A I T L I N ' S S T O R Y
My name is Caitlin Priday and I have been acquiring skills in the food industry for over seven years. I was lucky enough to brought up in the north of Byron Bay, in two little towns called Brunswick Heads and New Brighton- now famously known as the health and wellness capital of Australia. I found food medicine as my healer through a dark passage through depression and anxiety that had been cycling through my life since I was ten years old. When I found all hope to be lost, I drew all focus back inwardly, to my stomach, where all of our bacteria lives and controls most of our bodies reactions and emotional triggers. In a society where food is largely overly consumed, packed with chemicals, preservatives and numbers and made to be created fast, I was horrified as I began to self research into the singular most important thing we as humans do daily. We need to eat (and drink water) in order to survive. To go into researching the horrific reality of our food on this planet, I began to understand my own disconnection from the Earth and what I was putting into my body. From the beginning of time we have rotated our lives around food, locating ourselves by the most abundant fruits and animals in order to survive. Now we are at a point where we expect our food to be in our hands and in our bellies with very little effort. Many have the excuse that they do not have time to eat or cook healthy, as they do not have enough time. It is part of my mission to teach others that this is simply not so.
Once the research began, my journey ignited quickly, as I explored my own relationship with food. I started by going raw on a beach in Mexico, to organic farming in Canada, to cleansing and detoxing with juicing and clay. I found myself jobs in organic cafes, kitchens and juice bars that showed me new flavours, approaches and recipes to create foods that could suit all arrays of people in this complex day and age.
Through my own health challenges which a black mould infection, adrenal fatigue, constant headaches and aches and pains, I have found the only way through to keep myself on top of these issues is through correct food consumption and a healthy routine.
Because of this, I have tried many diets and approaches to food and have come through this journey with a whole array of healthy, nourishing and tasty meals for the body, mind and soul.
I have taken joy in exploring different flours, dairy alternatives and soy-free diets to be able to create dishes that suit even the most challenging Keto, Paleo, FODMAPS, Vegan, Gluten-Free or High Allergen diets. I believe in supporting each individual body, which means I do not tie myself or my menu’s to any particular diet choice. I believe in being able to create dishes that everyone can enjoy, and find great connection with once again and therefore support and create Omnivore through to Vegan food so that there is always choice across the board.
I am now expanding my work into education platforms, work with Post-Partum mothers and soon my Kinesiology and Psychology of Eating Diploma’s to further support my work and all those who come onto my path.
Food is my passion and ignites me to keep creating, learning and researching new ways to fill my stomach with joy. It is my hope that you will eat these creations and be inspired to create for yourself in the same way.
